Horned Melon Sauce:
1 horned melon
3 tablespoons lime juice
1 green onion, minced
1 teaspoon vegetable oil
1/4 teaspoon cumin
1 garlic clove, minced
Cut the melon into halves lengthwise. Use a grapefruit knife or small
sharp knife to scoop out the pulp. Combine the melon pulp, limejuice,
green onion, oil, cumin and garlic in a blender or food processor container.
Cover and process until well blended.
Passion Fruit Butter Makes about 1 cup
1/4-cup fresh passion fruit juice
3/4 cup orange juice
1-tablespoon sugar
1/2 cup softened butter
Combine juices and sugar in a medium saucepan. Heat to boiling. Reduce
heat to medium-high for about 10 to 15 minutes or until only 1/2 cup
of the mixture remains. Remove from heat. Slowly whisk butter in small
amounts until all of the butter is incorporated.
Passion Fruit Flip
1/4 cup frozen raspberries
1-tablespoon passion fruit juice
1-tablespoon limejuice
4 ounces yogurt
1-tablespoon honey
Place all the ingredients in a blender and blend until smooth
